Southern Baked Beans

This award-winning southern baked beans recipe is packed with bacon, ground beef and 4 types of beans all swimming in a thick, smoky, salty-sweet sauce.

Ingredients

  • 12 oz thick cut bacon
  • 1 pound hamburger
  • ⅔ cup chopped white onion
  • 1 teaspoon dry mustard
  • 2 teaspoons vinegar
  • ½ cup packed brown sugar
  • ½ cup white sugar
  • ½ cup ketchup
  • 1 can dark red kidney beans, undrained
  • 1 cup gluten free pork and beans
  • 1 can lima beans, undrained
  • 1 can large butter beans, drained
  • Salt and pepper to taste
  • Liquid smoke (optional, also to taste)

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a half sheet pan with parchment paper or aluminum foil.
  3. Place bacon on sheet pan in a single layer. If the bacon is thinner, you might need 2 pans. 
  4. Sprinkle generously with pepper.
  5. Bake for 10 minutes, flip, then bake another 5-10 minutes until crisp and done.
  6. Remove bacon from the oven and place it in a single layer on a plate lined with paper towels to keep it crispy.
  7. Meanwhile, in a ceramic dutch oven or medium/large saucepan, brown ground beef.
  8. When ground beef is almost cooked add chopped white onion, dry mustard, and a little salt and pepper. Cook until fully browned.
  9. Add vinegar, brown sugar, white sugar, ketchup, and all the beans and stir to combine.
  10. Bake, covered, at 350 degrees F for 30-40 minutes until warm through and thickened.
  11. Season with salt and pepper to taste and serve.

Notes

  • These beans freeze well, so feel free to double the batch and put some in the freezer for an easy dinner another night!

  • Check your labels to be sure everything is gluten free!
  • Lima beans can be found by the canned green beans and corn. If you don't care for limas, you can substitute navy beans or pinto beans.
  • You can easily reduce the sodium in this recipe by using low- or no-sodium-added beans, bacon, and ketchup.
