This warm star anise simple syrup adds polished depth to fall and winter cocktails. With licorice-like flavor and gentle spice, the syrup becomes smooth and aromatic without overpowering. Perfect for whiskey drinks, spiced sours, and coffee-based cocktails. Pairs beautifully with bourbon, dark rum, pear, apple, orange, and chai flavors.
Combine the water and sugar in a saucepan over medium heat. Stir occasionally until the sugar is fully dissolved.
Add the star anise pods and bring the mixture to a gentle simmer. Let it simmer for about 10 minutes, then turn off the heat. Allow the syrup to cool and steep for 1 hour.If the flavor isn’t strong enough for your taste, transfer everything to a mason jar and let it steep longer in the refrigerator, even overnight.
Double-strain the syrup into a clean jar or bottle to remove all spice fragments (use a fine-mesh strainer, then cheesecloth). Store in the refrigerator.
