For Breading

1 cup (240 ml) all-purpose flour (120 g)

2 large eggs

1 cup (240 ml) breadcrumbs (100 g)

For Hot Honey Feta Drizzle

¼ cup (60 ml) crumbled feta cheese (40 g)

3 tablespoons honey (45 ml)

1 teaspoon crushed red pepper flakes (2 g)

For Garnish

2 tablespoons chopped fresh parsley (8 g)


Instructions

  1. Roast the Squash: Preheat the oven to 400°F (200°C). Toss cubed butternut squash with olive oil, garlic powder, onion powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25–30 minutes, or until tender and slightly crisp.
  2. Cool and Bread: Allow roasted squash to cool slightly. Prepare three shallow bowls for breading flour, beaten eggs, and breadcrumbs.
  3. Bread the Squash: Dredge each cube in flour, dip into eggs, and coat with breadcrumbs, pressing gently so it adheres evenly.
  4. Cook the Bites: Heat oil in a skillet over medium heat. Fry cubes in batches for 2–3 minutes per side until golden. Drain on paper towels.
  5. Make the Hot Honey Feta Drizzle: In a small saucepan, heat honey and crushed red pepper flakes for 2–3 minutes. Remove from heat and stir in crumbled feta until smooth and creamy.
  6. Serve: Arrange bites on a platter. Drizzle with the warm honey-feta sauce and garnish with parsley before serving.
