Instructions
- Roast the Squash: Preheat the oven to 400°F (200°C). Toss cubed butternut squash with olive oil, garlic powder, onion powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25–30 minutes, or until tender and slightly crisp.
- Cool and Bread: Allow roasted squash to cool slightly. Prepare three shallow bowls for breading flour, beaten eggs, and breadcrumbs.
- Bread the Squash: Dredge each cube in flour, dip into eggs, and coat with breadcrumbs, pressing gently so it adheres evenly.
- Cook the Bites: Heat oil in a skillet over medium heat. Fry cubes in batches for 2–3 minutes per side until golden. Drain on paper towels.
- Make the Hot Honey Feta Drizzle: In a small saucepan, heat honey and crushed red pepper flakes for 2–3 minutes. Remove from heat and stir in crumbled feta until smooth and creamy.
- Serve: Arrange bites on a platter. Drizzle with the warm honey-feta sauce and garnish with parsley before serving.
