This is a super easy peach jam, and it’s so delicious. If you go peach picking or just happen to have peaches and want to make something delicious that’s quick and easy, here’s a recipe just for you.Makes approx. 2 cups
For easy peeling, carefully drop peaches into a pot of boiling water and boil for 1 - 2 minutes. Remove the peaches with a slotted spoon and place in a bowl. When they’re cool enough to handle, peel off the skin. The skins should slip right off. If not, use a paring knife to remove the skin. Remove the pits and chop the peaches.
Place peaches, sugar and lemon juice in a pot large enough to hold the peaches. It shouldn’t take up more than half the pot. I use the same pot I boiled the water in.
Give it a stir, bring to a boil, then lower the heat to medium. Simmer for 15 - 20 minutes, stirring occasionally to prevent scorching on the bottom. It should be thickened. Since this is being used as a filling and spread, we don’t have to be too fussy. We just want a thickened peach sauce. Mash the pleaches with a potato masher. Set aside and let cool.
Store in an airtight container and enjoy on top of or with scones, toast, muffins, or whatever you like.
