  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 cup heavy cream
  • 1 packet (7g) gelatin

For Topping:

  • Powdered sugar, for dusting

Instructions

  1. Prepare the Sponge Cake: Preheat oven to 350°F (175°C). Grease and line an 8- or 9-inch springform pan. Beat eggs and sugar until fluffy, fold in flour, and pour into the pan. Bake for 20-25 minutes, then cool completely and slice into two layers.
  2. Prepare the Filling: Bloom gelatin in cold water, then dissolve. Mix yogurt, sugar, and lemon juice, then stir in gelatin. Fold in whipped cream gently.
  3. Assemble: Place one cake layer in the pan, spread filling, and top with the second layer. Chill for at least 4 hours.
  4. Serve: Remove from pan, dust with powdered sugar, and serve.

Notes

Gelatin Alternative: Agar-agar can be used as a substitute for a vegetarian-friendly version.

Adjust Sweetness: You can adjust the sugar in the filling to taste, especially if serving with sweet toppings.
